Weight Watchers Broccoli Soup Recipe

Incredible Cheesy Broccoli Soup

There's nothing like a warm bowl of yummy soup on a cold and dreary day! My favorite soup hands down is this recipe for Broccoli Soup by Weight Watchers. If you follow weight watchers, I unfortunately only have the points values as its an old recipe and you will need to use the online tools to create the points plus values.

3.5 cups = 4 points:::::Prep Time: 30-45 min:::::Cook Time: 45-60 min

Ingredients

  • 4 cups water
  • 12 oz (4 cups) frozen hash browns
  • 1 cup (2 stalks) chopped celery 
  • 1 cup chopped carrots
  • 1 small onion, chopped
  • 4 cups chopped broccoli, or 1 bag frozen broccoli
  • 2 pkgs chicken broth mix (I used 2 envelopes of Wyler's Chicken Broth)
  • 6oz light velveeta cheese
  • 1 tsp salt
  • 1/4 tsp pepper
  • 3 Tbsp flour
  • 2 cups skim milk
Instructions
In a large pot, combine water, hashbrowns, vegetables, broth, salt, and pepper. Bring to a boil until vegetables are tender. In a separate bowl, blend flour and milk. Once pot has come to a boil, slowly add the blended flour and milk as thickening to the soup. Cube velveeta cheese and add to soup. Stir until cheese melts.

I bet this is only a point or two extra for points+. Looks tasty I will have to try it sometime, does it freeze well?
